Very special and exclusive sweet wine from a selection of grapes of the same name, adequately dehydrated under the sun and made by artisanal processes. Aged by the ‘Soleras’ and ‘Criaderas’ system during many years in American oak barrels, results to be an unctuous wine, velvety with a balance of sweetness that does not pall and a refreshing acidity.
The ‘Pedro Ximénez’ comes from the grape variety with the same name, which goes through a dry in the sun that allows its conversion to raisins. During the winemaking a very sweet must is obtained whose fermentation is stalled by the alcoholisation and offers a wine that, after a prolonged ageing process by the ‘Soleras’ system, obtains a very dark ebony colour with dense iodized touches, deep bouquet of raisin and toasted touches with caramel and honey. In the mouth it’s unctuous, velvety and flavourful, with great persistence and a balanced sweetness. Traditional wine of limited production.
