This ‘Amontillado’ is a benchmark for proper oenological practice. Monovarietal of Palomino grape, it has a lengthy ageing process in used American oak barrels soaked in wine by the ‘solera’ process, firstly under a veil of ‘flor’ yeast and subsequently in a prolonged manner without it.
