This wine, with a lengthy ageing process, initially as Fino under a veil of ‘flor’ yeast and afterwards without it, is the epitome of elegance, complexity and a centenarian tradition. For this Great wine it’s essential the exquisite selection of musts and its settlement in ‘solerajes’ with numerous ‘nurseries’ of American oak barrels, which allow bottling in limited series.

This ‘Amontillado’ is a benchmark for proper oenological practice. Monovarietal of Palomino grape, it has a lengthy ageing process in used American oak barrels soaked in wine by the ‘solera’ process, firstly under a veil of ‘flor’ yeast and subsequently in a prolonged manner without it. This procedure, due to its large number of scales, results in a subtle evolution of its organoleptic characteristics.

It’s amber coloured with iodized tones, an elegant bouquet, complex, very evolved and with memories of hazelnuts and a powerful, dry and long lasting aftertaste. Its over forty years ageing and its limited production guarantees an unique quality.
